Penne pasta or any pasta dish in my daughters favorite. She would ask me to prepare pasta for morning breakfast too :D. Pasta with white sauce without any vegetables is her favorite, I try to add vegetables to pasta dish and tell her to try it and she most of the time, eats it off without even complaining of the vegetables in the pasta :P(She is not very fussy about eating vegetables). I guess that’s what all mom’s do, add vegetables to kids favorite dish, to ensure children intake vegetables too.

1 cup Penne pasta
2 tbspn – Basil Pesto sauce – Click here for recipe.
1 tbspn Butter
1 tbspn Maida
1/4 cup cherry tomatoes
1 tspn olive oil
3 tbspn frozen sweet corn
3 tbspn Parmesan/Cheddar Cheese(grated)
1/2 cup Milk
Salt n Pepper for seasoning
Method of Preparation:
1.Cook the pasta according to package instructions. After it gets cooked drain in colander and keep it aside. Reserve about 1 large cup of pasta cooked water, which we will use it while make the sauce later.
2. Wash tomatoes and cut them half vertically, keep aside. In a pan, heat olive oil and saute the cherry tomatoes for about 3-4 mints on low flame. Do not make tomatoes mushy, we want to just fry them in oil little bit so that the tomatoes don’t remain raw in pasta.
3. Thaw the frozen sweet corn and keep it aside.
4.Heat the butter (or if want to avoid butter use 1 tbspn good quality olive oil) in pot, add maida, stir it well cook in medium flame. After 5 mins of stirring, add milk to the mixture, mix it well till it combines. Add salt and pepper to taste.
5.Add tomatoes from step 2 and sweet corn and let it cook for 3-4 mins. Add half of mentioned cheese and keep stirring for 3 mins on low flame. If the sauce becomes too thick, add 1 tbspn of pasta cooked water at any point of time. Make sure you add little by little, else the sauce will become too runny.
6.Now add basil pesto sauce, stir it well cook in medium fire for 2 mins. Then add the cooked pasta and give a gentle toss. Leave it on low flame for 2 mints. Sprinkle the remaining grated cheese.
8.Now the Creamy Cheesy Penne Basil Pesto Pasta is ready. Serve hot.
I added little pesto sauce to the dish, as my daughter does’t like the basil flavor. Please adjust the sauce quantity as per your taste.
I did not use butter(substituted with olive oil – health conscious) and used less cheese, you can add butter and more grated cheese as per your liking.
Veggies can be added to the dish, I used only cherry tomatoes and corn. You can use carrots, beans, and even green peas.
