Soups are the most comforting food. Some of soup recipes are very easy to put it to-gether and they taste delicious. Carrot soup is one of that kind, it’s very easy to make and it’s packed with nutrients of carrots. I enjoy all varieties of soups, be it veg or non-veg.. Here’s simple and nutritious carrot soup recipe. Vegetable soups are packed with nutrient values and it’s excellent for all seasons it’s good for everybody, adults and kids alike. Here’s Easy Carrot Soup recipe with step wise pictures
Carrots – 1 cups
Butter 1 tbspn
Pepper powder – 1 tspn(adjust acoording to your taste)
Salt to taste
Cream – for granish(optional)
Method of Preparation:-
Wash carrot. Peel the skin and chop into small pieces.
Cook the carrots with enough water in pressure cooker for 1-2 whistle(I cooked in open pot for 20 mins until carrots were cooked and soft)
Allow cooked carrots to cool. Add carrots to blend and salt, blend into smooth paste. Add water if required.
In a pan, add butter and allow it to melt. Add the blended carrot mixture and bring it to boil. Add pepper powder mix well. Check the seasoning and swtich off flame.
Carrot soup is ready. Transfer the soup to a bowl, garnish with cream(I also added some carrot julienes and coriander leaves for garnish). Serve hot.
I made this soup a little thicker consistency than the normal soup consistency. You can add more water or vegetable stock and make it thinner to the soup consistency.
