The last leg of mangoes in the market and I see very few mangoes in there! Makes me sad! Now, I have to wait for 1 whole year again to enjoy this delicious fruit. The best part however is that I used mangoes to the fullest I can and made many dishes out of it and ate it as it is even more! It’s time to say goodbye to mangoes with yet another very simple recipe, Watermelon, mango salsa salad. This recipe is a breeze.
The reason I didn’t call this salsa is, I haven’t mixed/smashed/blend the ingredients which is what traditionally a salsa would be. Second reason is generally salsa is a condiment more than a side dish or appetizer. I my recipe I have just roughly chopped the ingredients like the way salad is done, and I have used tomatoes, onions, jalapenos, cilantro which are salsa ingredients. It got me into thinking, should I call it salsa or salad? SO Salsa salad it is!
This salad has all the elements in it sweet, tangy, spicy, and fresh. The color of this salsa salad is so gorgeous that it will tempt you enough to make it soon as possible.:D
Here’s simple and delicious watermelon mango salsa salad-
Mangoes – 1(fully ripe)
Water melon – 1/4 of the whole melon
Purple onions – 1
Tomatoes – 3(I used 1/2 cup of cherry tomatoes)
Cucumbers – 1/2
Pickled Jalapenos – 3 nos(adjust)
Fresh coriander leaves – Hand full
Lime juice – from 1 lime
Salt to taste
Pepper powder – 1 tspn
1. Chop mangoes, water melon, onions, tomatoes, cucumber, pickled jalapenos. Mix them all to gather.
2. Now squeeze in lime juice, salt and pepper powder, toss gently until well coated.
3. Garnish with fresh chopped coriander leaves. I also added a few pieces of fresh jalapenos.
4. serve immediately as a side for main dish. Or eat it as it is!
It’s fresh, light, sweet from the mangoes, tang, spicy. A flavor packed salsa salad.
